These zesty collard greens are pan fried with smoky Spanish chorizo and a hint of lemon, until tender.

This makes a great side dish to pork, chicken or seafood.

Ingredients

  • 4 cup collard greens
  • 2 ounce fresh food spanish chorizo by sainsbury's
  • 2 tablespoon olive oil
  • 1 teaspoon lemon peel or zest raw
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Roughly dice the chorizo into half inch chunks. Heat the oil in a skillet over a medium/high heat. Add the chorizo and cook through until golden. Remove from the skillet with a slotted spoon and set to one side.
  2. Finely slice the greens, discarding any tough stems. Add to the skillet and pan fry for a few minutes in the oil until tender.
  3. Add the lemon zest, salt and pepper and cook for a few minutes more until the greens are soft and golden at the edges.
  4. Stir through the chorizo to serve.
