This quick and easy low carb slaw makes a great Keto Christmas side to accompany your favorite festive mains. Our Keto slaw combines low carb veggies with crunchy walnuts, sweet cranberries, and a simple orange and olive oil dressing. This egg and dairy-free slaw is quick to prepare and can be made ahead, making it a low fuss Keto Christmas recipe!

Can I Make This Nut-Free?

We have added walnuts to our Keto Christmas slaw for added texture and crunch. If you follow a nut-free diet, these can simply be omitted. You could also optionally replace them with low carb seeds if tolerated or diced radish for texture. Please be sure to adjust your macros accordingly for any changes made to the recipe.

How to Prepare the Sprouts

We have used raw Brussels sprouts in our low carb slaw. To make sure the sprouts are tender, they need to be very thinly sliced. It is also crucial to coat the sprouts completely in the slaw dressing and allow them to marinate for at least 10 minutes in the oil and orange juice. This will soften the sprouts and tenderize the vegetables.

Ingredients

  • 3 sprout brussels sprouts
  • 2 tablespoon olive oil
  • 1 tablespoon orange juice, fresh
  • 1 tablespoon, halves walnuts
  • 1 tablespoon reduced sugar craisin dried cranberries by ocean spray
  • 1 cup red cabbage
  • 1 cup green cabbage
  • ¼ medium – 2 1/2" diameter red onion
  • ½ teaspoon salt, sea salt
  • â…› teaspoon black pepper

Instructions

  1. Thinly slice the cabbage and onion and add to a mixing bowl. Slice the tough bases from the sprouts and discard any wilted outer leaves. Wash and thinly slice the sprouts. Add to the bowl with the other vegetables and toss to combine.
  2. Add the olive oil, orange juice, salt, and pepper to a small bowl. Whisk together until well combined. Taste and adjust the seasoning or add more oil or orange juice if desired.
  3. Roughly chop the walnuts. Sprinkle the chopped walnuts and cranberries over the prepared vegetables. Stir together to combine.
  4. Drizzle the dressing over the slaw. Stir well to combine, coating everything in the dressing mixture. Set aside for 10-15 minutes to allow the vegetables to soften before serving.
