Enjoy this super fast recipe as a side dish to your lunch or the base of a cold noodle dish. Simple peanut sauce is poured over fresh zucchini noodles and topped with nutty sesame seeds.

Ingredients

  • ¼ cup water
  • 1 teaspoon rice vinegar
  • 1 tablespoon peanut butter
  • ½ tablespoon soy sauce
  • ½ teaspoon garlic, fresh
  • 6 ounce zucchini, raw
  • 1 teaspoon, whole pieces sesame seeds

Instructions

  1. Combine all the ingredients except the zucchini and sesame seeds in a small pot. Bring the ingredients to a simmer while whisking to form a smooth peanut sauce. Cook until any excess liquid evaporates, leaving a thickened peanut sauce – about 17g per serving. Set this aside to cool and thicken.
  2. Spiralize your zucchini. For this recipe, it is recommended you do not cook the zucchini but leave it fresh instead. However, at your discretion, you can quickly toss the zoodles in hot oil just long enough to soften the texture to al dente.
  3. Serve the peanut sauce drizzled over the zoodles or toss the zoodles in the warm sauce before topping with sesame seeds.
