This simple recipe for creamed sprouts is rich with heavy cream and just a hint of aromatic thyme.

A great addition to Sunday lunch or to accompany grilled meats or fish.

Ingredients

  • 3 cup, cut pieces brussels sprouts, raw
  • 1 tablespoon unsalted butter
  • 1 clove garlic
  • 1 tablespoon, chopped thyme, fresh
  • 1 tablespoon, chopped white onion
  • ½ cup vegetable broth, bouillon or consomme
  • ½ cup heavy cream
  • ¼ teaspoon salt, sea salt
  • â…› teaspoon black pepper

Instructions

  1. Heat the butter in a large pan over a medium heat. Finely slice the garlic and add to the pan along with the onion and sweat until tender.
  2. Trim and slice the sprouts in half and add to the pan along with the thyme and stir well.
  3. Add the stock and bring to a simmer for 4 minutes until the sprouts are just tender.
  4. Add in the heavy cream and season with salt and pepper. Stir to combine and simmer gently until thickened – about 5 minutes. Serve immediately.
