Light, zesty and totally refreshing, this cucumber salad is the ultimate summer side.

Perfect to accompany grilled meats, this salad comes together in no time at all and is a great addition to the BBQ table.

Ingredients

  • 2 tablespoon creme fraiche
  • 2 medium – 4 1/8" long scallions
  • 2 tablespoon dill weed, fresh
  • 2 teaspoon lemon peel
  • 1 tablespoon mayonnaise
  • ½ large – 8 1/4" long cucumber
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Slice the cucumber into thin discs – roughly ¼ cm wide. Add the cucumber discs to a mixing bowl along with the salt and stir well to combine. Set aside for 15 minutes allowing the cucumber to release any excess liquid.
  2. Whilst the cucumber is resting, finely slice the scallions and roughly chop the dill. Add the crème fraiche, mayonnaise, lemon juice, lemon zest, scallions, dill and black pepper to a mixing bowl. Stir well to combine.
  3. Drain any excess water from the sliced cucumber and blot with kitchen paper to absorb any further moisture and the salt.
  4. Spoon the creamy dressing over the cucumber discs and stir well to coat. Refrigerate until ready to serve.
