This simple radish mash is rich with butter and heavy cream and seasoned with garlic and fresh parsley.

This is a great side dish to complement roasted chicken or grilled pork chops!

Ingredients

  • 17 ½ ounce radish
  • 1 ½ tablespoon butter
  • 1 ½ tablespoon heavy cream
  • 1 clove garlic
  • 1 tablespoon parsley, fresh
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Trim the tips of the radishes and slice in half. Add to a pan of boiling water and simmer for 5-6 minutes until tender. Drain well.
  2. Transfer the radishes to a food processor and blend to a rough mash. Transfer the mash to a sieve and squeeze out as much excess liquid as possible.
  3. Spoon the radish back into the food processor. Add the butter, cream, parsley, garlic, salt and pepper.
  4. Blend again until you reach your desired mash consistency and heat through if required.
