Ingredients

  • 5 medium slice (yield after cooking) bacon
  • 3 ounce kale
  • ¼ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Lay the strips of bacon down in a wide pot (a pot will be best for holding the kale later) on high heat. Cook the bacon through until very crispy. Then, set aside to cool.
  2. Leave the bacon grease in the pot and turn the heat down to a medium-low. Chop your kale if it’s not chopped already, and place it in the pot. Cook the kale down until it’s very wilted and retaining crispy edges – about 5 minutes. Season with salt and pepper.
  3. Chop the cooled bacon into bits and stir it into the crispy kale. Serve warm with your main dish.
