This mayo free slaw is packed with crunchy cabbage and onion, crispy fried prosciutto and tossed in a lemon mustard dressing.

This makes a great alternative to slaw with mayo, perfect served with chicken or pork.

Ingredients

  • 2 slice prosciutto
  • 2 tablespoon olive oil
  • 1 cup cabbage
  • ½ cup red cabbage
  • ½ small red onion
  • ½ tablespoon lemon juice
  • ½ teaspoon mustard
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat half a tablespoon of olive oil in a skillet over a medium heat. Add the prosciutto slices and cook through until crisp and golden. Set aside to cool.
  2. Very thinly slice the cabbage and onion and add to a large mixing bowl. Toss to combine.
  3. Add the remaining olive oil, lemon juice and mustard to a small bowl. Season with salt and pepper and whisk together to combine.
  4. Drizzle the dressing over the slaw and mix well to coat.
  5. Very thinly slice the prosciutto into strips and add to the slaw before serving. Toss to combine.
