This cucumber salad is packed with salty anchovies and capers, zesty lemon and sweet red onion.

This makes a great side dish to white fish or grilled chicken.

Ingredients

  • 2 anchovies anchovy canned
  • 2 teaspoon olive oil
  • 1 tablespoon parsley, fresh
  • 1 teaspoon capers
  • 1 teaspoon lemon peel or zest raw
  • 1 teaspoon lemon juice
  • ¼ small red onion
  • ¼ large – 8 1/4" long cucumber
  • ⅛ teaspoon black pepper

Instructions

  1. Dice the cucumber, thinly slice the onion and roughly chop the parsley. Add to a mixing bowl. Roughly tear in the anchovy fillets and add the capers and lemon zest. Toss to combine.
  2. Season the salad with black pepper and drizzle over the lemon juice and olive oil. Stir well to combine.
