This tender cabbage is loaded with aromatic spices, creamy butter and sweet red onion.

This is a great side to accompany curried meats, rotisserie chicken or lamb chops.

Ingredients

  • 2 cup cabbage
  • 2 tablespoon unsalted butter
  • 1 clove garlic
  • 1 teaspoon cumin, seed
  • 1 tablespoon curry powder
  • ½ cup vegetable broth, bouillon or consomme
  • ¼ medium – 2 1/2" diameter red onion

Instructions

  1. Heat a tablespoon of butter in a large skillet over a low/medium heat. Finely slice the onion and add to the skillet, cooking gently until tender.
  2. Thinly slice the garlic and add to the pan along with the cumin seeds. Cook for a further minute or two until fragrant.
  3. Thinly slice the cabbage and add to the skillet with the remaining butter and curry powder. Stir well to combine and cook over a medium heat for 4-5 minutes until the cabbage is just tender.
  4. Add the vegetable stock and simmer for 5-6 minutes until all the liquid has evaporated and the cabbage is soft.
