These curried cauliflower skewers are loaded with aromatic herbs and spices and oven baked until tender and golden.

These make for a great side dish to curried meats or to bring a bit of variety to Sunday lunch!

Ingredients

  • 1 small – head – 4" diameter cauliflower
  • 1 tablespoon tomato puree
  • 1 teaspoon curry powder
  • 1 teaspoon cumin, ground
  • 1 teaspoon spices coriander seed or ground
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil
  • ¼ teaspoon turmeric, ground
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Cover four wooden kebab skewers with water to soak.
  2. Cut the cauliflower into florets and add to a pan of boiling water. Boil for 3 minutes until just tender, drain and submerge immediately in ice cold water to stop the cooking process. Drain, pat dry and add to a mixing bowl.
  3. Preheat the oven to 400 degrees Fahrenheit.
  4. Add the tomato purée, oil, curry powder, cumin, coriander, lemon juice, turmeric, salt and pepper to a mixing bowl. Mix together well to combine.
  5. Add the tomato mixture to the cauliflower. Use your hands to rub the marinade all over the cauliflower.
  6. Divide the cauliflower evenly between the four kebab skewers.
  7. Bake for 20-25 minutes until fork tender and the edges are starting to caramelize.
