These curried cauliflower skewers are loaded with aromatic herbs and spices and oven baked until tender and golden.
These make for a great side dish to curried meats or to bring a bit of variety to Sunday lunch!
Ingredients
- 1 small – head – 4" diameter cauliflower
- 1 tablespoon tomato puree
- 1 teaspoon curry powder
- 1 teaspoon cumin, ground
- 1 teaspoon spices coriander seed or ground
- 1 teaspoon lemon juice
- 1 tablespoon olive oil
- ¼ teaspoon turmeric, ground
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Cover four wooden kebab skewers with water to soak.
- Cut the cauliflower into florets and add to a pan of boiling water. Boil for 3 minutes until just tender, drain and submerge immediately in ice cold water to stop the cooking process. Drain, pat dry and add to a mixing bowl.
- Preheat the oven to 400 degrees Fahrenheit.
- Add the tomato purée, oil, curry powder, cumin, coriander, lemon juice, turmeric, salt and pepper to a mixing bowl. Mix together well to combine.
- Add the tomato mixture to the cauliflower. Use your hands to rub the marinade all over the cauliflower.
- Divide the cauliflower evenly between the four kebab skewers.
- Bake for 20-25 minutes until fork tender and the edges are starting to caramelize.
