This keto Salsa is fresh and tangy with a little spice. Low carb veggies are mixed with healthy fats from avocado and olive oil to create a refreshing side to a main meal.
Perfect served with grilled meats or to top baked fish.
Ingredients
- 4 small – approx 2" long dill pickles
- 1 tablespoon coriander leaf, fresh
- 1 tablespoon parsley, fresh
- 1 small – 2 2/5" diameter tomato
- 1 tablespoon olive oil
- ½ tablespoon lime juice, fresh
- 1 1/4cup cucumber seedless english
- ¼ pepper raw hot red chili peppers
- ¼ cup avocado
Instructions
- Finely dice the tomato, cucumber, avocado and chili and finely slice the dill pickles. Add to a mixing bowl with the fresh herbs, lime juice, olive oil and stir well to combine.
- Refrigerate until ready to serve.
