Our low carb recipe is prepared with frozen green beans, sweet red onion, butter, aromatic garlic, chicken stock, and smoky Spanish chorizo. This makes a flavorsome side dish; perfect served alongside your preferred Keto mains.

Do I Need to Thaw the Beans?

This Keto side recipe uses frozen green beans. There is no need to thaw the beans prior to cooking, as they can be added to the skillet straight from the freezer. If preferred, you may substitute the frozen green beans for fresh green beans, adjusting cooking times and macros as needed.

Serving Suggestions

These delicious Keto green beans made a great low carb side dish. Perfect served with grilled pork, white fish or chicken. These also make a great addition to the Sunday dinner table, served with a whole roast chicken or a joint of roasted pork.

Ingredients

  • 3 cup green beans (string beans), cooked from frozen
  • 2 oz fresh food spanish chorizo
  • 1 tablespoon butter, unsalted
  • 1 clove garlic
  • ½ small red onion
  • ⅓ cup chicken broth, bouillon or consomme, homemade

Instructions

  1. Melt the butter in a large skillet over a medium heat. Roughly dice the chorizo. Add the chorizo to the skillet and cook until lightly golden and releasing its oils. Remove the chorizo from the skillet with a slotted spoon and set to one side.
  2. Thinly slice the onion and garlic. Add the onion and garlic to the skillet used to cook the chorizo. Sweat gently over a low heat until tender and fragrant.
  3. Add the chicken stock and green beans to the skillet. Stir well to combine. Simmer the beans for 8-10 minutes until tender and hot through, stirring occasionally. The liquid should all be evaporated, and the beans should be starting to brown in places.
  4. Return the chorizo to the skillet. Stir well to combine. Heat through for a minute or two more, then serve the beans hot with your preferred Keto mains.
