Fried green tomatoes are one of those iconic dishes of the American midwest. It’s a great way to use up your firm tomatoes that haven’t or won’t ripen in time and they just happen to taste delicious when coated in a crumbly breading and deep fried. These green tomatoes are coated in crushed pork rinds and pair excellently with a variety of condiments like ketchup, ranch, tartar sauce, or even a greek yogurt based sauce.

Ingredients

  • 1 pound green tomato, raw
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ¼ cup almond flour
  • 1 large raw egg
  • 1 tablespoon heavy cream
  • 8 cup, whole pieces fried pork rinds
  • 12 tablespoon avocado oil

Instructions

  1. Start by slicing approx. 3 green tomatoes into ½-inch slices. Each tomato should offer 4-5 slices, with the ends discarded. Lay the slices flat and pat them dry with a paper towel. Sprinkle the salt and pepper over the tomatoes.
  2. On a large plate, arrange the almond flour (you may need to gather more for the sake of breading your tomatoes). In a small bowl, whisk together the egg and cream. Additionally, place all the pork rinds in a ziploc bag and crush them into a fine crumb. Arrange the pork rinds on a second large plate.
  3. Heat the avocado oil in a large skillet over high heat. For this recipe, you will need to fill the skillet with a ½-inch of oil (the amount listed in the ingredients accounts only for the oil you will consume). When the oil is hot enough for frying, bread each tomato slice first in the almond flour, then the egg, then the pork rinds. Lay each breaded tomato slice in the hot oil. You may wish to start with 4-6 slices at a time.
  4. Fry the tomato slices for about 3 minutes per side, adjusting the oil heat to avoid burning. Transfer the fried tomatoes to a paper towel to drain excess frying oil.
  5. Repeat steps 3-4 until all green tomatoes are fried. Enjoy with a squirt of ketchup or another favorite keto condiment!
