About

This side dish is composed of perfectly tender bits of bright green asparagus that are lightly seasoned and brightened up with fresh lemon juice. The real drool-worthy component of this dish is the slivers of garlic that caramelize and turn melt-in-your-mouth delicious.

Ingredients

  • 6 ounce asparagus, raw
  • 1 tablespoon butter, unsalted
  • 1 clove garlic, fresh
  • â…› teaspoon salt
  • â…› teaspoon black pepper, ground
  • 1 teaspoon lemon juice
  • ½ tablespoon butter, unsalted

Instructions

  1. Start by blanching fresh spears of asparagus so they are bright green and tender enough to pierce with a fork. When they are cool enough to handle, dice the asparagus into tiny pieces. Set the pieces aside.
  2. Melt the first amount of butter in the pan over low heat. Slice whole garlic cloves as thin as possible and place them in the butter. Let the garlic slivers roast in the butter until golden and translucent.
  3. Toss the diced asparagus in the pan with the salt and pepper. Turn the heat up and cook until the asparagus turns golden brown and the garlic darkens.
  4. Finally, turn the heat back down low. Stir in the lemon juice and remaining butter. Toss until the asparagus is coated in butter. Serve immediately.
