These garlicky green beans are cooked until tender then sautéed with aromatic garlic and a zesty lemon and tahini dressing.

These are a great side to Middle Eastern inspired dishes – perfect with cauliflower cous cous.

Ingredients

  • 5 ounce green beans (string beans), raw
  • 1 clove garlic
  • 1 ½ tablespoon olive oil
  • 2 teaspoon lemon juice
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper
  • 1 teaspoon tahini

Instructions

  1. Add the green beans to a small saucepan of boiling water. Add a little pinch of salt and simmer for 3-4 minutes until fork tender. Drain completely and steam dry.
  2. Whilst the beans are cooking, add the tahini, lemon juice, one tablespoon of olive oil and a pinch of salt and pepper to a small mixing bowl. Whisk together until smooth.
  3. Heat the remaining olive oil in a skillet over a low/medium heat. Crush the garlic and add to the pan, sweating for a minute until tender and fragrant.
  4. Add the green beans and sautée for a minute with the garlic.
  5. Increase the heat and add the tahini dressing, stir well to coat the beans and cook for 30-40 seconds to heat through.
