The equivalent to sour cream mashed potatoes: cauliflower florets are roasted until golden brown then blended with tangy goat cheese, creamy butter, and plenty of garlic! The original recipe here made about 3 cups total.
Ingredients
- 1 ½ pound cauliflower, raw
- ¼ cup olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper, ground
- 1 teaspoon garlic
- 1 tablespoon unsalted butter
- 2 ounce goat cheese, soft
- 1 ½ tablespoon whipping cream, extra heavy/gourmet, not whipped
Instructions
- Preheat an oven to 350 degrees. Trim and break up your cauliflower into florets and spread across a sheet pan coated with pan spray. Drizzle the olive oil all over the cauliflower.
- Bake the tray of cauliflower for 35 minutes, rotating the florets halfway through. Once done baking, transfer the cauliflower to a food processor with all remaining ingredients.
- Turn the food processor on and blend until you have a creamy mashed potato mixture. Use a spoon to scrape down the food processor as needed. This recipe was garnished with fresh chopped chives!
