The equivalent to sour cream mashed potatoes: cauliflower florets are roasted until golden brown then blended with tangy goat cheese, creamy butter, and plenty of garlic! The original recipe here made about 3 cups total.

Ingredients

  • 1 ½ pound cauliflower, raw
  • ¼ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • 1 teaspoon garlic
  • 1 tablespoon unsalted butter
  • 2 ounce goat cheese, soft
  • 1 ½ tablespoon whipping cream, extra heavy/gourmet, not whipped

Instructions

  1. Preheat an oven to 350 degrees. Trim and break up your cauliflower into florets and spread across a sheet pan coated with pan spray. Drizzle the olive oil all over the cauliflower.
  2. Bake the tray of cauliflower for 35 minutes, rotating the florets halfway through. Once done baking, transfer the cauliflower to a food processor with all remaining ingredients.
  3. Turn the food processor on and blend until you have a creamy mashed potato mixture. Use a spoon to scrape down the food processor as needed. This recipe was garnished with fresh chopped chives!
