Grits are typically paired with breakfast, but you can enjoy this hot side with any meal. You may find this recipe similar to cauliflower mashed potatoes, since both share the base of cauliflower. The key in this recipe is to create the perfect texture of grits: a little creamy and a little “gritty.” A sprinkling of shredded gouda cheese is what makes this side absolutely delectable!

Ingredients

  • 10 ½ ounce cauliflower, cooked from fresh
  • ½ tablespoon unsalted butter
  • ¼ cup heavy cream
  • ¼ cup, shredded gouda cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 clove garlic
  • ¼ teaspoon onion powder
  • ½ tablespoon, chopped green onions

Instructions

  1. If you need to cook your cauliflower, simply boil in water until tender. If you are using frozen cauliflower, you can microwave or steam it until tender. Either way, it’s important to use hot, cooked cauliflower for this recipe to work.
  2. Combine the cauliflower with all the other ingredients, except for green onion, in a food processor. Pulse the mixture until the dairy items are melted and incorporated into the “grits”. The key is to not process too much so some cauliflower is creamy and some is still textured like grits. If you prefer your grits to be a little looser, you may thin out the mixture with warm water 1 tablespoon at a time.
  3. Serve hot with freshly chopped green onions!
