These tasty green beans are par-cooked until tender then sautéed with crispy bacon, zesty lemon, aromatic thyme and garlic.

These make a great side to roasted chicken or pork.

Ingredients

  • 3 ½ ounce green beans (string beans), raw
  • 2 slice – 6" long bacon
  • 2 teaspoon, chopped thyme, fresh
  • 1 clove garlic
  • 1 teaspoon lemon peel or zest raw
  • 1 tablespoon olive oil
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the green beans to a pan of boiling water and simmer for 4-5 minutes until just tender. Drain completely.
  2. Heat the olive oil in a large skillet over a medium heat. Roughly dice the bacon and add to the skillet until just cooked through.
  3. Thinly slice the garlic and add to the pan, sweating gently until tender and the bacon is crisp and golden.
  4. Add the green beans, lemon zest, thyme, salt and pepper. Stir well to combine and sauté for 2 minutes. Serve hot.
