These simple green beans are sautéed with sweet red onion and aromatic garlic until tender.
This is a versatile side to be served with meat, poultry or fish.
Ingredients
- 5 ounce green beans (string beans), raw
- 2 tablespoon olive oil
- 1 clove garlic
- ½ small red onion
Instructions
- Thinly slice the red onion. Heat a tablespoon of olive oil in a skillet over a medium heat. Add the onion and sweat for a minute until just tender. Reduce the heat to low and continue to cook the onions until golden and starting to caramelize.
- Whilst the onions are cooking, add the green beans to a pan of boiling water and simmer for 4-5 minutes until just tender. Drain completely.
- Once the onion is golden, crush the garlic and add to the pan with the remaining oil. Sweat gently until tender and the onion starts to crisp.
- Add the beans to the skillet and toss in the garlic, onion and oil, cooking for a minute or two until heated through.
