About

These simple green beans are sautéed with sweet red onion and aromatic garlic until tender.

This is a versatile side to be served with meat, poultry or fish.

Ingredients

  • 5 ounce green beans (string beans), raw
  • 2 tablespoon olive oil
  • 1 clove garlic
  • ½ small red onion

Instructions

  1. Thinly slice the red onion. Heat a tablespoon of olive oil in a skillet over a medium heat. Add the onion and sweat for a minute until just tender. Reduce the heat to low and continue to cook the onions until golden and starting to caramelize.
  2. Whilst the onions are cooking, add the green beans to a pan of boiling water and simmer for 4-5 minutes until just tender. Drain completely.
  3. Once the onion is golden, crush the garlic and add to the pan with the remaining oil. Sweat gently until tender and the onion starts to crisp.
  4. Add the beans to the skillet and toss in the garlic, onion and oil, cooking for a minute or two until heated through.
