This tender grilled lettuce is cooked until golden and lightly charred, then topped with a zesty anchovy and caper butter sauce.

This makes a great side to white fish, chicken or pork or could even be served as a lunch option on its own.

Ingredients

  • 2 anchovies anchovy canned
  • 1 1 little gem lettuce
  • 1 clove garlic
  • 1 tablespoon unsalted butter
  • 1 teaspoon lemon peel or zest raw
  • 1 teaspoon capers
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil
  • â…› teaspoon salt, sea salt
  • â…› teaspoon black pepper

Instructions

  1. Wash the lettuce and slice in half lengthwise. Slice a thin layer from the tough base of the lettuce, ensuring all the leaves still remain intact.
  2. Heat a griddle pan over a high heat. Brush the lettuce all over with the olive oil and lemon juice and season with salt and pepper.
  3. Griddle for 2-3 minutes on both sides or until tender and slightly charred.
  4. Whilst the lettuce is cooking, melt the butter in a skillet over a medium heat. Roughly chop the garlic and add to the butter along with the capers and lemon zest. Tear in the anchovies and stir to combine, cooking for 3-4 minutes until fragrant and the anchovies have melted.
  5. Spoon the anchovy butter over the charred lettuce to serve.
