There’s something truly satisfying to the palate about popping a few olives in your mouth. A little bite of salty, crumbly feta cheese can really hit the spot too. Instead of paying a chunk of change for your grocery store’s olive bar, you can make a whole jar of marinated olives at home for half the price! This recipe has just the right combination of herbs and a splash of citric lemon to intensify the natural flavors. Make a whole mason jar full of olives and feta, and you have a great side dish to complement grilled meats or hearty meals.

Ingredients

  • 6 ounce green olives
  • 4 ounce feta cheese
  • ¼ cup olive oil
  • ½ lemon yields lemon juice raw
  • 1 teaspoon spices coriander seed
  • 1 tsp, leaves spices oregano dried
  • ½ tsp, leaves spices basil dried
  • 3 clove garlic

Instructions

  1. Drain the can of green olives and remove the pits if necessary. Dice the feta cheese into small pieces. Combine these two ingredients in a bowl.
  2. Stir in the remaining ingredients with the olives and feta cheese. Store the mix in a mason jar or an airtight tupperware container with all the liquid and seasonings.
  3. Refrigerate your tightly sealed container for at least 24 hours and enjoy the next day! The longer you let the olives marinate, the more flavors they’ll develop.
