Keto Indian Spinach Ingredients

This Indian spiced spinach is loaded with flavor and heat. Sweet red onion, aromatic garlic, cumin seeds, fresh ginger, zesty lemon and fiery red chili is sautéed with baby spinach in melted butter. Once cooked, the spinach is mixed with natural yogurt to calm the heat of the spices.

Serving Suggestions

This spiced Keto spinach is the perfect side to an Indian inspired dinner. Ideal with curried meat or low carb protein of your choice. Alternatively you could serve with plain, grilled or roasted meat to add a little spice to dinner time!

Ingredients

  • 4 cup baby spinach
  • 1 clove garlic
  • 1 tablespoon red onion
  • 1 tablespoon unsalted butter
  • 1 teaspoon cumin, seed
  • 1 slice – 1" diameter ginger root, raw
  • 1 teaspoon lemon peel or zest raw
  • ½ each – approx 4" – 6" long hot chili peppers, red, raw
  • ⅓ cup dannon all natural yogurt, plain
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Melt the butter in a saucepan over a low/medium heat. Grate the ginger, crush the garlic and thinly slice the chili. Add the garlic, chili, onion, cumin seeds, lemon zest and ginger to the saucepan. Stir well to combine and sweat gently for 3 minutes or until tender and fragrant.
  2. Add half the spinach to the saucepan. Cook for a moment until it begins to shrink and wilt. Add the remaining spinach, salt and pepper. Stir to combine until all the spinach has just wilted.
  3. Set aside to cool. Once cool, spoon the yogurt over the spinach. Stir well to combine, coating the spinach in the yogurt. Serve immediately.
