What Kind of Peppers Can I Use?

We have used store-bought ready roasted jarred bell peppers for our creamy Keto sauce. We recommend using whole roasted peppers preserved in oil, free from added sugars. If you prefer, you can roast your own bell peppers. Roast whole red peppers at 400 degrees for 40 minutes, turning halfway through. The peppers should be soft and lightly charred. Peel away the skin and use the peppers as needed.

This easy Keto sauce makes a versatile accompaniment to bring flavor and fats to your low carb meals. Ingredients

  • 4 pieces sundried tomatoes in oil by pastene
  • 1 teaspoon lemon peel or zest raw
  • 1 clove garlic
  • ⅔ cup whipped cream, aersosol, heavy cream
  • ½ cup, whole pieces basil, fresh
  • ½ medium – 2 1/2" diameter x 2 3/4" red bell peppers, sweet, raw or blanched, marinated in oil mixture
  • ½ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the bell pepper, sundried tomatoes, lemon zest, basil, salt and pepper to a food processor. Peel the garlic and add. You may add more or less garlic as desired.
  2. Blend the ingredients together to combine. You should have a chunky sauce consistency. Add the heavy cream to the food processor.
  3. Blend the cream and vegetable mixture together until you have a smooth sauce. Taste the mixture and adjust seasonings as necessary. You may add more lemon, salt and pepper as desired. Stir through low carb spaghetti or heat through and use as a sauce for cooked meats.
