This simple but refreshing salad is loaded with juicy jumbo shrimp, cooling cucumber, sweet red onion and creamy avocado, bound in a light yogurt and dill dressing.

This makes a great sharing side salad or filling for lettuce wraps.

Ingredients

  • 2 ¾ ounce jumbo cooked shrimp by wegmans
  • 1 tablespoon dannon all natural yogurt, plain
  • 1 tablespoon dill weed, fresh
  • ½ tablespoon lemon juice
  • ½ tablespoon mayonnaise
  • ½ each avocado
  • ¼ medium – 2 1/2" diameter red onion
  • ⅓ large – 8 1/4" long cucumber
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Finely dice the cucumber and avocado and thinly slice the onion. Add to a serving bowl along with the cooked shrimp. Toss to combine.
  2. Finely chop the dill and add to a mixing bowl with the yogurt, lemon juice, mayonnaise, salt and pepper. Whisk together until smooth.
  3. Spoon the dressing over the shrimp and vegetables and stir well, coating the salad in the yogurt. Refrigerate until ready to serve.
