These quick and easy cabbage wedges are brushed with olive oil and sprinkled with garlic and a generous layer of mozzarella cheese then baked until tender and golden.

These are a great snack or side!

Ingredients

  • 2 tablespoon olive oil
  • 1 small – head – approx 4 1/2" diameter cabbage
  • 1 clove garlic
  • 1 cup, grated mozzarella cheese
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Slice the cabbage into 8 even discs or slices, each roughly a half inch thick and arrange across a shallow oven tray.
  3. Brush the cabbage slices on both sides with the olive oil.
  4. Crush the garlic and sprinkle over the cabbage slices and scatter over the grated mozzarella. Season with salt and pepper.
  5. Transfer to the oven to bake for 18-20 minutes until the cabbage is tender throughout and the cheese is bubbling and golden.
