These quick and easy cabbage wedges are brushed with olive oil and sprinkled with garlic and a generous layer of mozzarella cheese then baked until tender and golden.
These are a great snack or side!
Ingredients
- 2 tablespoon olive oil
- 1 small – head – approx 4 1/2" diameter cabbage
- 1 clove garlic
- 1 cup, grated mozzarella cheese
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Slice the cabbage into 8 even discs or slices, each roughly a half inch thick and arrange across a shallow oven tray.
- Brush the cabbage slices on both sides with the olive oil.
- Crush the garlic and sprinkle over the cabbage slices and scatter over the grated mozzarella. Season with salt and pepper.
- Transfer to the oven to bake for 18-20 minutes until the cabbage is tender throughout and the cheese is bubbling and golden.
