If you are missing bread, this is the recipe for you! This loaf is like an artisan bread in that it is shaped into a round loaf. The Dutch oven helps the loaf to rise well and develop a crust. This loaf is studded with dried cherries and walnuts. Perfect to slice and eat!

Ingredients

  • 1 ½ cup almond flour
  • ⅓ cup fiberlife whole ground psyllium husk
  • ½ cup coconut flour
  • ½ cup organic ground flax seed by wild oats
  • 1 teaspoon baking soda
  • 1 teaspoon coarse kosher salt by morton
  • ⅓ cup dried fruit unsweetened unsulfured dark sweet cherries by trader joe's
  • ½ cup walnuts
  • 6 large raw egg, white
  • 2 large raw egg
  • ¾ cup original coconut milk unsweetened by silk
  • ¼ cup apple cider vinegar
  • ¾ cup warm water

Instructions

  1. Preheat an oven to 450 F. Place a 6 quart dutch oven with the lid on in the oven as soon as you turn it on to allow it to come to temperature with the oven. Combine all dry ingredients together in a bowl with a whisk.
  2. Add dried cherries and walnuts.
  3. Whisk together the wet ingredients (except the water) then add them to the dry ingredients.
  4. Add in the water ¼ cup at a time. Mixing to incorporate until all the water is combined before adding the next ¼ cup.
  5. Shape the loaf into a round ball. Carefully remove the hot dutch oven, remove the lid, and spray the inside with nonstick cooking spray. Place rounded dough into the dutch oven. Cover with the lid and allow it to bake for 15 minutes.
  6. Remove the lid and turn the oven down to 300 F and allow to bake for an additional 2 hours until baked through completely.
  7. Allow to cool before slicing.
