This nut free butter uses pumpkin seeds in place of peanuts or almonds.
This is a great savory nut free butter option for spreading or dipping. If you would prefer a little sweetness you can add your preference in low carb sweetener when blending.
Ingredients
- 2 tablespoon coconut oil
- 1 ½ cup pumpkin seeds
- 1 teaspoon salt, sea salt
Instructions
- Add the pumpkin seeds to a food processor and pulse to combine.
- Blend the nuts until they form a very fine crumb – you may need to stop and start the blender to prevent overheating.
- Add the coconut oil and salt and sweetener if required. Blend to a smooth butter. This may take some time depending on the strength of your blender. Ensure you do not allow the machine to overheat.
