This keto pork stuffing makes a great addition to the holiday table alongside roasted turkey or chicken.

Perfect cooked on its own or cooked inside the turkey as a stuffing.

Ingredients

  • 1 pound ground pork
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 tablespoon, chopped walnuts
  • 1 tablespoon, chopped thyme, fresh
  • ½ tablespoon rosemary, fresh
  • ½ 1 tbsp sage. fresh
  • ⅓ cup finely ground almond meal flour by bob's red mill
  • ¼ cup pumpkin, canned
  • ¼ large red onion
  • ¼ teaspoon spices nutmeg ground
  • 2 teaspoon lemon peel or zest raw
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Finely chop the garlic. Heat the olive oil in a pan over a medium heat and add the onion and garlic. Sweat until tender. Set aside to cool.
  3. Add the ground pork to a mixing bowl with the ground almonds, pumpkin purée, lemon zest, finely chopped herbs, chopped walnuts, nutmeg and the cooled onion mixture. Season well.
  4. Use your hands to mix the stuffing together until all ingredients are well combined, then transfer to an oven proof dish. Flatten the mixture so that it is one smooth layer.
  5. Transfer to the oven to bake for 20-25 minutes until golden brown on top and the pork is completely cooked through.
