This rich and oozy queso dip is flavored with sweet onion, tender tomatoes, fiery chili and aromatic garlic.

This is a great sharing dip for low carb nachos!

Ingredients

  • 3 cherry tomato raw (includes cherry, grape, roma)
  • 2 tablespoon sour cream
  • 1 tablespoon unsalted butter
  • 1 clove garlic
  • 1 each – approx 4" – 6" long hot chili peppers, red, raw
  • 1 large scallions
  • 1 teaspoon, chopped cilantro
  • ½ cup, grated cheddar cheese
  • ½ cup, grated mozzarella cheese
  • ½ cup, grated gouda cheese
  • ¼ medium – 2 1/2" diameter white onion
  • â…› teaspoon black pepper, ground

Instructions

  1. Finely chop the onion, tomatoes and chili and crush the garlic. Melt the butter in a small pan over a low/medium heat. Add the vegetables and sweat gently for 2-3 minutes until tender and the tomatoes have softened.
  2. Increase the heat to medium, add the sour cream and stir through the vegetables until hot through and simmering.
  3. Add the cheddar and stir until melted, taking care to not burn the cheese.
  4. Add the mozzarella and stir until melted and combined with the cheddar.
  5. Add the Gouda, season with black pepper and stir until melted and all three cheeses are smooth and well combined.
  6. Transfer the dip to a serving bowl and garnish with sliced scallions and a sprinkling of fresh cilantro to serve.
