This keto take on potato salad is packed with flavor from aromatic scallions and fresh dill, crisp radish, salty capers, and a hint of lemon.

This makes a great side to a keto salad or even as a topping for keto crackers!

Ingredients

  • 7 medium – 3/4" to 1" diameter radish
  • 5 small – 3" long scallions
  • 2 teaspoon, whole pieces dill weed, fresh
  • 1 ½ teaspoon capers
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice
  • 1 tablespoon creme fraiche
  • ¼ teaspoon salt, sea salt
  • â…› teaspoon black pepper

Instructions

  1. Thinly slice the radishes, finely chop the scallions and dill and add to a mixing bowl along with the lemon juice, capers, salt and pepper. Toss to combine.
  2. Add the creme fraiche and mayonnaise and stir well, coating the vegetables. Refrigerate until ready to serve.
