This keto take on potato salad is packed with flavor from aromatic scallions and fresh dill, crisp radish, salty capers, and a hint of lemon.
This makes a great side to a keto salad or even as a topping for keto crackers!
Ingredients
- 7 medium – 3/4" to 1" diameter radish
- 5 small – 3" long scallions
- 2 teaspoon, whole pieces dill weed, fresh
- 1 ½ teaspoon capers
- 1 tablespoon mayonnaise
- 1 teaspoon lemon juice
- 1 tablespoon creme fraiche
- ¼ teaspoon salt, sea salt
- â…› teaspoon black pepper
Instructions
- Thinly slice the radishes, finely chop the scallions and dill and add to a mixing bowl along with the lemon juice, capers, salt and pepper. Toss to combine.
- Add the creme fraiche and mayonnaise and stir well, coating the vegetables. Refrigerate until ready to serve.
