This flavorsome keto dip is loaded with cream cheese, salty olives, sweet roasted red pepper, aromatic basil and tender shallot.

This is a great dip for keto crackers or low carb vegetables.

Ingredients

  • 6 medium green olives
  • 2 tablespoon cream cheese spread
  • 1 tablespoon basil, fresh
  • 1 teaspoon lemon juice
  • 1 tablespoon, chopped shallot
  • ½ medium – 2 1/2" diameter x 2 3/4" red bell peppers, sweet, raw or blanched, marinated in oil mixture
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Finely dice the shallot and add to a food processor along with the remaining ingredients.
  2. Blend to a coarse consistency. Taste and adjust seasonings if required and keep refrigerated until ready to serve.
