This red pepper pesto uses classic pesto ingredients combined with roasted jarred bell peppers to create an aromatic dressing.

Perfect for salads, wraps and drizzled over grilled meats, this pesto is also used in our Keto red pepper pesto baked chicken thighs.

Ingredients

  • 1 tablespoon, whole pieces pine nuts
  • 1 tablespoon, grated parmesan cheese
  • 1 clove garlic
  • 1 teaspoon lemon peel or zest raw
  • ½ cup, whole pieces basil
  • ⅓ cup roasted red peppers in brine by kroger
  • ¼ teaspoon salt, sea salt
  • ¼ cup extra virgin olive oil

Instructions

  1. Roughly chop the peppers and add to a food processor along with the basil, pine nuts, garlic, Parmesan, lemon zest and salt. Pulse together to combine. Taste and season further if required.
  2. Add the olive oil to the food processor.
  3. Blend again until you have a pesto consistency. Refrigerate in an airtight container until ready to use.
