This easy side dish is recognizable across many nations! Rice and peas is a light and nutritious combination, while the addition of bacon adds ketogenic fat and an appetizing flavor component.

Ingredients

  • 2 slice – 6" long bacon, pork
  • 2 cup cauliflower rice
  • ½ cup green peas
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • 1 teaspoon parsley, dried

Instructions

  1. Start by frying your bacon in a medium-sized skillet to a crisp on both sides. When done, set the bacon aside to cool before chopping into small bits. Leave this aside for the final step.
  2. Leaving the bacon grease in the pan, set the stove to a medium-high heat. Toss all the remaining ingredients together in the pan, making sure the ‘rice’ is coated in all the spices and the fat. Cook until the rice and peas are tender and lightly fried to a golden brown.
  3. Stir the cooked bacon bits into the skillet before serving hot. This dish here was garnished with a heaping spoonful of ground paprika!
