This side dish is super quick to throw together! Simply toss the asparagus in olive oil and add a little salt, then roast away! Roast veggies at a high temp so they get some color, yet retain a nice crunch.

Ingredients

  • 30 medium spear (5-1/4 in. to 7 in. long) asparagus
  • 2 teaspoon olive oil
  • ¼ teaspoon kosher salt

Instructions

  1. Preheat oven to 400 F. Wash and trim asparagus. Bend the bottom half of an asparagus stem until it breaks. This is the same place where you will align and trim the rest of the stalks.
  2. Place asparagus on a sheet tray, drizzle with olive oil and salt. Toss to coat.
  3. Bake asparagus for 8 minutes until cooked, yet still crunchy and green.
