It is easy to miss some potatoes on the keto diet, but have no fear, radishes are here! They are a great alternative to potatoes and can be paired with any roast or chicken!

Ingredients

  • 1 pound radish
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt

Instructions

  1. Preheat oven to 450 F. Wash and cut all radishes in half.
  2. Drizzle on the olive oil and sprinkle in the salt. Toss to combine.
  3. Place on a sheet tray, cut side down so the bottoms will brown. Bake for 18 minutes until browned on the bottom.
  4. Serve hot!
