These simple green beans and radishes are rich with butter, zesty lemon and add a splash of color to the dining table.

These are perfect served with lamb or chicken.

Ingredients

  • 3 ½ ounce green beans (string beans), raw
  • 6 small radish, raw
  • 1 tablespoon unsalted butter
  • 2 teaspoon lemon peel
  • ½ tablespoon, whole pieces pine nuts
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the green beans to a medium pan and cover with water. Simmer for 3-4 minutes until just tender, then drain all the water from the pan.
  2. Add the butter to the pan with the green beans. Thinly slice the radishes and add to the pan along with the lemon zest, salt and pepper. Stir well and saute gently for 3-4 minutes until the vegetables are tender.
  3. To serve scatter over pine nuts.
