Turnips are an excellent low carb side dish! They have the meaty feel of a potato without the extra carbs. For this dish, turnips are cubed and tossed in garlic, olive oil, and smoked paprika before being roasted. The result is a delicious side dish or snack when you’re sick of salads and greens and want something that feels a little more substantial. Enjoy!
Ingredients
- 6 cup, cubes turnips raw
- 3 tablespoon olive oil
- 1 teaspoon spices paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Cut the ends off of your turnips and peel them. Lay them flat on a cutting board and cut the ends off of them so they form the shape of a square or rectangular.
- Cut them in strips and then cut the strips so you have a bunch of 1” cubes when you’re finished.
- Toss the cubes in oil, then add salt, smoked paprika, black pepper and garlic powder.
- Lay the cubes out on a parchment-covered baking sheet. They’ll roast best if you spread them out so they are not touching or barely touching.
- Roast in the oven for 30 minutes. Flip the cubes over with a spatula and roast for another 20 minutes, or until the start to brown slightly. Enjoy!
