Turnips are an excellent low carb side dish! They have the meaty feel of a potato without the extra carbs. For this dish, turnips are cubed and tossed in garlic, olive oil, and smoked paprika before being roasted. The result is a delicious side dish or snack when you’re sick of salads and greens and want something that feels a little more substantial. Enjoy!

Ingredients

  • 6 cup, cubes turnips raw
  • 3 tablespoon olive oil
  • 1 teaspoon spices paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Cut the ends off of your turnips and peel them. Lay them flat on a cutting board and cut the ends off of them so they form the shape of a square or rectangular.
  2. Cut them in strips and then cut the strips so you have a bunch of 1” cubes when you’re finished.
  3. Toss the cubes in oil, then add salt, smoked paprika, black pepper and garlic powder.
  4. Lay the cubes out on a parchment-covered baking sheet. They’ll roast best if you spread them out so they are not touching or barely touching.
  5. Roast in the oven for 30 minutes. Flip the cubes over with a spatula and roast for another 20 minutes, or until the start to brown slightly. Enjoy!
