This simple spiced cabbage is cooked with tender bacon and onion until soft and caramelized.

This is a great side to accompany roasted chicken or grilled pork.

Ingredients

  • 4 slice – 6" long bacon
  • 2 cup cabbage
  • 1 clove garlic
  • 1 teaspoon hot chili pepper, dried, with seeds
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • ¼ medium – 2 1/2" diameter white onion
  • ½ cup chicken broth, bouillon or consomme, ready-to-serve can

Instructions

  1. Melt the butter in a skillet over low/medium heat. Thinly slice the onion and add to the pan, sweating gently until tender.
  2. Crush the garlic and dice the bacon. Add to the pan along with the chili flakes and stir well to combine. Cook until the bacon and onions are golden brown.
  3. Thinly slice the cabbage and add to the pan with the olive oil. Stir well and cook over a medium heat for 4-5 minutes until tender and starting to caramelize.
  4. Add the stock and simmer for 5-6 minutes until the cabbage is soft and the liquid has evaporated. Serve hot.
