This spicy bell pepper slaw is loaded with low carb veggies, crunchy pumpkin seeds, aromatic cilantro and coated in a zesty lime and chili dressing.

This is a great side dish to grilled meats or fish.

Ingredients

  • 2 large scallions
  • 2 tablespoon cilantro
  • 1 tablespoon sour cream
  • 1 teaspoon lime juice, fresh
  • 1 tablespoon, whole pieces pumpkin seeds
  • 1 tablespoon mayonnaise
  • ¾ cup cabbage
  • ½ teaspoon hot chili pepper, dried, with seeds
  • ½ medium – 2 1/2" diameter x 2 3/4" red bell peppers, raw
  • ½ medium – 2 1/2" diameter x 2 3/4" yellow bell peppers, raw
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Thinly slice the cabbage, bell peppers and scallions and add to a large mixing bowl. Roughly chop the cilantro and add to the bowl, toss to combine.
  2. Add the sour cream, mayonnaise, lime juice, chili flakes, salt and pepper to a small mixing bowl and whisk together.
  3. Spoon the dressing over the vegetables and stir until evenly coated.
  4. Scatter over the pumpkin seeds and stir through the slaw to serve.
