This spicy bell pepper slaw is loaded with low carb veggies, crunchy pumpkin seeds, aromatic cilantro and coated in a zesty lime and chili dressing.
This is a great side dish to grilled meats or fish.
Ingredients
- 2 large scallions
- 2 tablespoon cilantro
- 1 tablespoon sour cream
- 1 teaspoon lime juice, fresh
- 1 tablespoon, whole pieces pumpkin seeds
- 1 tablespoon mayonnaise
- ¾ cup cabbage
- ½ teaspoon hot chili pepper, dried, with seeds
- ½ medium – 2 1/2" diameter x 2 3/4" red bell peppers, raw
- ½ medium – 2 1/2" diameter x 2 3/4" yellow bell peppers, raw
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Thinly slice the cabbage, bell peppers and scallions and add to a large mixing bowl. Roughly chop the cilantro and add to the bowl, toss to combine.
- Add the sour cream, mayonnaise, lime juice, chili flakes, salt and pepper to a small mixing bowl and whisk together.
- Spoon the dressing over the vegetables and stir until evenly coated.
- Scatter over the pumpkin seeds and stir through the slaw to serve.
