This side dish is on rotation on a regular in my household! I love how the cumin pairs perfectly well with spicy serrano peppers and freshly squeezed lime juice. If you have never had cooked cucumber…you will be amazed at how delicious it is!

Ingredients

  • 1 pound cucumber
  • 6 ½ ounce green bell pepper
  • 1 tablespoon, whole pieces cumin, seed
  • 1 tablespoon avocado oil
  • 1 each serrano peppers, raw
  • 1 tablespoon lime juice, fresh
  • ½ teaspoon coarse kosher salt by morton

Instructions

  1. Cut and wash cucumbers and bell peppers. Cut the cucumber into lengthwise quarters and then cut crosswise to make small pieces.
  2. Cut the peppers into 1” x 1” pieces. Slice the serranos into thin rounds.
  3. Heat a large nonstick saute pan over medium high heat. Add in the oil once the pan is hot. Add in the cumin and saute for 30 seconds or until fragrant.
  4. Add in the bell peppers and serranos and cook for a minute or so.
  5. Add in the cucumbers and cook until all the veggies still have a slight crunch to them but the rawness has been cooked off. Add in the lime juice and salt. Taste and add more lime and salt to your liking.
