This keto adaptation of spinach Maria uses cream cheese to create a rich and creamy sauce as opposed to thickening with flour.

This makes for a hearty and filling side dish perfect for Thanksgiving or alongside roasted meats.

Ingredients

  • 6 cup spinach frozen chopped or leaf unprepared
  • 5 ounce cream cheese spread
  • 1 clove garlic
  • 1 medium – 2 1/2" diameter white onion
  • 1 tablespoon unsalted butter
  • 1 teaspoon mustard
  • ⅛ teaspoon spices nutmeg ground
  • 1 cup, grated cheddar cheese
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper, ground

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Set the frozen spinach aside to thaw, then drain away any excess liquid. Arrange the thawed spinach in an oven proof dish.
  3. Melt the butter in a pan over a medium heat and finely slice the garlic. Add the garlic to the pan along with the onion and sweat until tender.
  4. Add the mustard and cream cheese and stir until the cheese has melted and you have a thick sauce.
  5. Add the nutmeg and the cheddar and stir until the cheese has melted.
  6. Remove the pan from the heat and pour the cheese sauce over the thawed spinach. Season with salt and pepper and stir well.
  7. Scatter over the Monterey Jack cheese.
  8. Bake for 15-18mins until bubbling and golden.
