About

This simple dish of chorizo and peppers is pan fried with aromatic garlic, lemon and fresh thyme until tender and golden.

This makes a great side or tapas dish!

Ingredients

  • 1 ½ ounce fresh food spanish chorizo by sainsbury's
  • 1 ½ tablespoon olive oil
  • 1 clove garlic
  • 1 teaspoon lemon peel or zest raw
  • 1 teaspoon, chopped thyme, fresh
  • ½ large – 3" diameter x 3 3/4" red bell peppers, raw
  • ½ large – 3" diameter x 3 3/4" yellow bell peppers, raw

Instructions

  1. Heat the olive oil in a skillet over a medium heat and roughly dice the chorizo. Add the chorizo to the pan and cook for a minute so that it starts to release its oils.
  2. Thinly slice the bell peppers and crush the garlic. Add to the skillet along with the lemon zest and thyme and stir well to combine.
  3. Continue to cook over a medium heat for a further 6 minutes or until the peppers are soft and the chorizo is cooked through and golden brown.
