A healthy coating of olive oil maintains a keto-friendly fat content. In less than 15 minutes you can have a wonderfully healthy and flavorful side dish full of vitamins!

Ingredients

  • 7 ½ ounce zucchini
  • 3 ounce green beans (string beans), raw
  • 2 ¼ ounce yellow bell peppers, raw
  • 3 tablespoon olive oil
  • 1 ½ teaspoon salt
  • 1 teaspoon black pepper
  • ¾ teaspoon garlic powder
  • 2 teaspoon italian seasoning
  • 1 ounce spinach
  • 1 wedge – juice from one wedge or slice lemon juice

Instructions

  1. Chop and combine the zucchini, green beans, and bell pepper. Try to chop the vegetables so they are all equal thickness for even cooking.
  2. Combine the vegetables with the olive oil, salt, pepper, garlic, and italian seasoning.
  3. Heat a large skillet on high heat. Then, toss in the veggie mixture. Cook the vegetables for about 5 minutes, giving an occasional stir, until they are tender.
  4. Stir in the spinach and lemon juice. Continually stir for about 1 minutes or until the spinach is wilted.
  5. Serve hot! Enjoy!
