This keto trapanese is a great alternative to pesto and uses sundried tomatoes for extra sweetness.

Perfect served with grilled fish or meat or added to salads.

Ingredients

  • 5 piece sundried tomatoes packed in oil drained
  • 3 tablespoon olive oil
  • 2 teaspoon lemon juice
  • 1 tablespoon, whole pieces almonds, blanched
  • 1 clove garlic
  • 1 tablespoon, grated parmesan cheese
  • ⅓ cup, whole pieces basil, fresh
  • ¼ teaspoon salt, sea salt

Instructions

  1. Add the almonds to a dry pan over a low heat. Toast gently for 2-3 minutes until lightly golden.
  2. Add the almonds to a food processor along with the garlic, Parmesan, basil, lemon juice, sundried tomatoes and salt. Pulse to combine.
  3. Add the olive oil and blend to form a chunky pesto. Refrigerate until ready to serve.
