This quick bread is very similar to the basic Carb Manager Quick Bread, but the batter is more dense and has a hearty helping of sunflower seeds and flax seeds. There are loads of nutritional value in each piece, with a rich, buttery flavor and crunchy texture. Spread a little butter on a slice in the morning or enjoy as is!

Ingredients

  • 6 large raw egg
  • 3 tablespoon butter
  • 1 ½ tablespoon olive oil
  • ¾ cup almond flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking aids xanthan gum by bob's red mill
  • ¼ cup, whole pieces sunflower seeds, dry roasted, unsalted
  • 2 tablespoon, whole pieces flax seeds

Instructions

  1. Preheat an oven to 350 degrees. Melt the butter, then combine the eggs, butter, olive oil, almond flour, salt, and xanthan gum in a stand mixer with a mixer paddle attachment. You can mix until the eggs pale slightly in color for a fluffier end product.
  2. Use a spatula to fold in the whole sunflower kernels and flax seeds.
  3. Spray a 9X5 bread loaf pan with pan spray. You may also line the bottom of the pan with parchment paper to aid in flipping the cooked bread out later. However, make sure the paper is totally flat. Pour the batter into the pan.
  4. Bake the bread for about 40 minutes or until a toothpick comes out clean from the center. The edges and top of the loaf should be slightly golden brown.
  5. Cool the pan on a baking rack for 10 minutes. Then, flip the bread out. Allow the bread to cool entirely before slicing.
  6. Cut the bread load into 5 slices across the loaf. You can slice each piece again in half lengthwise to create two pieces of bread per serving.
