Are Cranberries Keto?

Cranberries are suitable for a low carb diet when used sparingly. Using just a few is a great way to add an extra boost of festive flavor to your Keto Thanksgiving recipes. You will need to find dried cranberries that contain zero – or very little added sugars. Some dried cranberries are also sweetened with just a touch of natural fruit juice. If you wish to keep the carb count lower, you may omit the cranberries or use a smaller quantity as desired.

Can I Make Dairy-Free?

We have used butter to roast our cauliflower as well as a topping of tangy grated Parmesan. If you wish to make the recipe dairy-free, we recommend roasting the cauliflower in either coconut or olive oil. You may also substitute the Parmesan with nutritional yeast flakes to provide the cheesy flavor. Please be sure to adjust your macros to account for any changes made to the recipe.

Ingredients

  • 3 tablespoon unsalted butter
  • 2 tablespoon, grated parmesan cheese
  • 2 tablespoon, ground almonds, raw
  • 2 teaspoon rosemary, fresh
  • 1 medium – head – 5" to 6" diameter cauliflower
  • 1 tablespoon reduced sugar craisin dried cranberries by ocean spray
  • ½ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Dice the cauliflower into even-sized florets. Add to a saucepan of boiling water. Bring to a simmer and cook for 4-5 minutes or until only just tender. Drain completely and pat dry.
  2. Preheat the oven to 400 degrees Fahrenheit. Finely chop the rosemary and add to a small bowl along with the ground almonds, grated Parmesan, and a pinch of salt and pepper. Stir together well to combine.
  3. Arrange the cauliflower florets in an even layer in the base of an ovenproof dish. Scatter over the dried cranberries and season with a pinch of salt and pepper. Roughly dice the butter and dot around the cauliflower.
  4. Sprinkle the seasoned ground almond and Parmesan crumb over the top of the cauliflower and butter. Transfer to the oven and bake for 20-25 minutes. The crumb should be golden and the cauliflower tender and buttery. Serve hot alongside your Keto Thanksgiving mains.
