This Keto mash is deliciously rich and buttery and packed with flavor from three different cheeses. We have prepared our low carb mash with tender cauliflower, grated cheddar cheese, oozy mozzarella, tangy grated parmesan, creamy butter, aromatic garlic and topped with crispy bacon pieces to serve. This makes a tasty side option, perfect served with your preferred Keto mains.

Can I Use Different Cheeses?

We have made our rich and flavorsome Keto mash with three different cheeses. If you would like, you can experiment with alternative shredded cheeses to create a different flavor profile. Some good substitution options would be Edam, Gouda, Monterey Jack and Pecorino cheese. Please be sure to adjust your macros to account for any changes made to the original recipe.

Serving Suggestions

Our low carb cauliflower mash makes a great alternative to a traditional potato-based mash and can be enjoyed by the whole family. The recipe is delicious served alongside roasted or grilled meats such as chicken or pork. This Keto friendly dish also makes a great alternative side for the Sunday dinner table.

Ingredients

  • 3 slice – 6" long bacon
  • 1 medium – head – 5" to 6" diameter cauliflower
  • 1 clove garlic
  • 1 tablespoon butter, unsalted
  • 1 tablespoon extra virgin olive oil
  • 1 tbsp, grated parmesan cheese, dry (grated)
  • ½ teaspoon salt, sea salt
  • ¼ cup, grated cheddar cheese
  • ¼ cup, grated mozzarella cheese
  • â…› teaspoon black pepper

Instructions

  1. Dice the cauliflower into florets and add to a medium saucepan. Cover the florets with water and bring up to a boil. Reduce to a simmer and cook for 7-8 minutes or until the cauliflower is tender and soft enough to mash.
  2. While the cauliflower is cooking, heat the olive oil in a skillet over a medium/high heat. Add the bacon slices. Cook the bacon through until crisp and golden. Set aside to cool. Once cool enough to handle, roughly chop the bacon.
  3. Drain the cooked cauliflower completely. Add the butter, mozzarella, cheddar, Parmesan, garlic, salt and pepper to the pan with the hot cauliflower. Use a potato masher to mash until smooth and soft. If you would prefer a smoother consistency, you can also blend the mash. Transfer the mash to a serving bowl. Top the mash with the chopped cooked bacon pieces. Serve hot with your preferred Keto mains.
