This Keto vegan recipe makes a deliciously simple yet flavorsome side. Our low carb plant-based dish has been prepared with tender sliced mushrooms, coconut oil, coconut cream, aromatic garlic, nutritional yeast, and fragrant fresh chives. These creamy vegan Keto mushrooms are a delicious accompaniment to your plant-based mains, perfect served with vegan sausages or steaks.

What is Nutritional Yeast?

Nutritional yeast is a form of deactivated yeast. It is commonly sold in grocery stores or health food stores in the form of dried yellow flakes. Nutritional yeast has a flavor and smell reminiscent of cheese, making it an excellent plant-based substitute. We have stirred a tablespoon of nutritional yeast flakes through our creamy mushrooms right towards the end of cooking to add that tangy flavor of cheese.

What Mushrooms Should I Use?

For this Keto-friendly recipe, we have used thickly sliced cremini mushrooms. The recipe is, however, easily adaptable, and you can simply swap for an alternative mushroom. Button, portobello, or any other common white mushrooms would all make good substitutes. Please be sure to adjust your macros to account for any changes made to the original recipe.

Ingredients

  • 2 ½ cup brown mushrooms (italian or crimini mushrooms), raw, high in vitamin d
  • 1 tablespoon coconut oil
  • 1 tablespoon nutritional yeast seasoning
  • 1 tablespoon chives
  • 1 clove garlic
  • ½ cup coconut cream (liquid from grated meat)
  • ½ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Melt the coconut oil in a skillet over a medium heat. Slice the mushrooms into half-inch thick slices. Thinly slice the garlic. Add the mushrooms to the skillet along with the garlic. Pan-fry the mushrooms and garlic for 4 minutes until tender and fragrant.
  2. Add the coconut cream to the skillet along with the salt and pepper. Stir well to combine. Bring the coconut cream up to a boil. Reduce to a simmer for 5 minutes.
  3. Finely chop the chives. Add the chopped chives to the skillet along with the nutritional yeast. Stir well to combine. Heat through for a minute more. Serve hot with your preferred Keto mains.
