This air fryer recipe for Keto zucchini chips requires a little prep but is well worth the effort! The recipe calls for one medium zucchini, sliced into discs. Once prepared, the sliced zucchini are dipped in beaten egg, then coated in a batter of ground almonds, grated cheddar, parmesan, chili powder and garlic powder.

To get the best from your Keto zucchini chips it is important to coat them evenly in batter on both sides. Once they are prepared and ready to cook, you will need to arrange them in the air fryer basket in a single layer. They won’t all fit so you will need to cook in two batches. Also, these Keto zucchini chips carry a little heat from ground chili powder. Feel free to adjust or omit the chili to suit your own personal taste. Be sure to adjust your macros for any changes made.

Ingredients

  • 2 teaspoon chili powder
  • 1 ½ tablespoon, grated parmesan cheese
  • 1 large raw egg
  • 1 teaspoon garlic, powder
  • 1 medium zucchini
  • ¾ cup, ground almonds, raw
  • ⅓ cup, grated cheddar cheese
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Slice the ends from the zucchini and discard. Slice the zucchini into 20 even discs roughly 1/5 of an inch thick. Arrange on a clean work surface.
  2. Beat the egg in a small bowl. To a larger bowl, add the ground almonds, parmesan, cheddar, garlic powder, chili powder, salt and pepper. Mix well to combine.
  3. Take one of the zucchini discs and submerge it in the beaten egg so that it is well coated. Then press the coated zucchini into the ground almond mixture so that it is liberally coated with breading on both sides. Repeat this process with the remaining zucchini chips.
  4. Lightly oil the basket of your air fryer. Arrange half the coated zucchini chips in an even layer in the base of your air fryer basket. Place the basket in the air fryer and set the temperature to 375 degrees Fahrenheit. Set the timer for ten minutes.
  5. Remove the first batch of zucchini chips from the air fryer. They should be crisp and golden. Set to one side whilst you bake the remaining chips.
